Elderberries Syrup

  • 1/2 cup dried elderberries
  • 2 cups spring water
  • 5 whole cloves (or 1 teaspoon ground cloves)
  • 1-inch piece of ginger root (or 2 teaspoons dried ginger root)
  • 1 teaspoon cinnamon
  • 1/2 cup agave syrup or date syrup

  1. Combine the elderberries, water, cloves, and ginger in a saucepan. Bring to a boil, then reduce heat and simmer uncovered for 30 minutes.
  2. Strain off the liquid, and press any juice from the berries using the back of your spoon.
  3. Cool slightly, then add the agave syrup or date syrup and stir until combined.
  4. Let cool completely, then store in a jar in the refrigerator for up to 2 weeks.
